IKIGAI

"Ikigai" (生きがい) is a Japanese concept that roughly translates to "reason for being" or "purpose in life." It's a term that encompasses the idea of finding joy, fulfillment, and meaning in one's life. The concept suggests that each person has an ikigai, a unique intersection of what they love, what they are good at, what the world needs, and what they can be paid for.

in every sushi roll. I am Evert Broer and for the past 18 years I've dedicated myself to the art of sushi. From the sandy shores of Tulum to the lively scenes of Ibiza, I had the pleasure of sharing
my sushi creations with the world.

My journey with sushi began as a humble apprentice, learning the delicate balance of flavors and techniques, that make each roll a work of art. Over the years I have traveled the world, soaking in the diverse culinary cultures that have enriched my approach to sushi-making.

For me, sushi is more than a dish, it's my Ikigai, my reason for being. This Japanese concept resonates deeply with my passion and commitment to crafting unforgettable sushi experiences. It's more than just the food on the plate; it's about the joy of creating something that brings people together.
